The Daimyo series is all about luxury craftsmanship – special knives that are also prepping, plating, and serving workhorses.
Each individualized showstopper features ergonomic handles made from acrylic and a layer of abalone shells from the depths of the Pacific Ocean, off the eastern coast of Miyagi. The blades are hand-forged from premium Damascus steel, with all final edge-work manually sharpened.
Individuality
Every Daimyo chef’s knife is unique. The distinct hues of abalone shells sculpt an exclusive pattern on every knife, meaning no two handles are the same.

The abalone layer in the handle creates an unprecedented look, with its colours evolving when light hits it from different angles.
Defining craftsmanship
Each blade is hand-forged from 67 layers of Damascus steel, then sharpened and polished by our skilled knife sharpeners. The finished knife is unmatched in sharpness – and stays sharp for longer.
